Lino Sauro, after his experience in Singapore, decided to open in Sidney, on Kensington Street, his new restaurant Olio. His cuisine, clean in flavours, is inspired mainly by his home-land, Sicily. This means a parade of arancini and caponata to start a meal that passes through rigatoni alla norma (tomato, eggplants and ricotta cheese) or a sea-bass al sale. The wine list is very interesting, and offers the chance to taste wines from all over Italy, with a focus, of course, on the sicilian ones.
